Van-style breakfast tacos

For the past year, in my going-pretty-good-so-far attempt of making Kerri fall in love with me, I have brought her coffee in bed every single morning. As a result of the coffee ritual, a breakfast-taco ritual was implemented. The new ritual was needed to get her out of bed, otherwise she would sit there for hours drinking her coffee and Instagram’ing. Both rituals continue to this day, and today I share the wisdom granted to me by the taste-buds of a woman falling in love. Enjoy.

First, I must admit a few things: 1) the tacos are not complicated at all, 2) I am not a great cook by even the furthest stretch of the definition, and 3) the only difference between a van-style taco and a regular is being prepared *just* outside a van, and prepared in a quantity so as to have half left over for the next day to reduce the number of times I have to cook bacon (which requires the stove to be moved outside the van).

(This makes about 8 tacos, so cut it in half if needed)
Ingredients:

  • 4 strips of thick bacon
  • 2 small potatoes
  • 2 eggs
  • 2 cloves garlic
  • 8 small corn tortillas
  • a splash of milk
  • as much cheese as you want
  • salt & pepper to taste

Cut bacon into small 1/2inch size cubes and toss into preheated (high-heat) cast iron or non-stick frying pan

As the bacon cooks, cube the two potatoes into 1/4inch size cubes. When bacon is done cooking, remove from pan but keep an unhealthy amount of the bacon grease in the pan. Place potatoes into said grease to cook.  (I sometimes caramelize some diced onions in the grease first, setting them aside to add back in with the bacon and garlic later.)

Finely dice the garlic and set aside with the bacon. Salt & pepper the potatoes. When potatoes are completely cooked through, add bacon and garlic (and onions) and turn off heat.

As the pan cools, whisk eggs in bowl along with a splash of milk. Include egg mixture in pan once the pan has cooled to a medium temperature. Cover, and allow eggs to slow-cook, stirring as needed, with only low heat if needed. Prepare tortillas during this time. Add cheese to pan, for those who like cheese, allowing it to melt.

Scoop into tortilla and add what ever fixin’s you want and eat!
