Heading south

I’ve spent the past few days packing, restocking, and organizing the van to it’s new travel configuration. Free from having to tow, I can take on some other items while leaving others behind. My new Microwave and slow-cooker continue to sit pretty, but have gone unused. I suspect that will be the case for some time, as I hope to spend as much time as possible away from 120v power.

My latest flea-market purchase was a cast iron bean kettle. I thought it was a dutch oven, but there is one distinct difference; The lid on a dutch oven is flat to hold coals, but the lid on my kettle is rounded. I have a plan to remedy that minor issue. Either way, I am very excited about doing some cooking and baking over (and under) coals while in warmer lands, which brings me to the topic of this post…

This morning I will be heading South down I-25 into New Mexico. My ultimate destination is Arizona, well actually Mexico, to ride out the snow and cold of the mountain states, but I will take my time getting down.  I am looking forward to getting back into the boondocking and cooking like the cowboys did, over coals.

Moose does not appear to share my enthusiasm. He has grown very fond of Imelda an Timmy… and the house. I hope the upcoming adventures will distract him from his broken heart of leaving what he surely considers his home now.
