Chicken Chilli
Since I was stationary and had 120v power for the day I figured it was a good time to plug in that slow cooker and make up the chicken chilli I had in store. It was simple; just slice-or-dice and put everything into the pot. 2 hours later I had a scrumptious chicken chilli which I placed into Tupperware for future meals.
The ingredients;
- half a chick breast (already cooked, cut up)
- half can of beans
- half can of chicken broth
- half cup of milk
- half can of corn
- a red potato (diced)
- Some onion, bell pepper, garlic, ground cumin, & salt & pepper
- and to thicken it all up, a half-serving of instant potatoes
Since my slow cooker is only a 2 quart size the left overs of each ingredient were stored away for future meals. By my calculations, that is 4 servings (or more) for under a dollar per serving. If you have a 4 quart cooker, double up on each and easily serve 6-8 people for under a dollar each.
I have to admit, that ground cumin makes all the difference. It may become my favorite spice.
